Lemon Chickpea Bowls with Crunchy Greens

Lemon Chickpea Bowls with Crunchy Greens

A good grain bowl has contrast in every forkful: something warm, something crisp, and a sauce bright enough to bring it all together. These lemon chickpea bowls pair cumin-scented chickpeas with cucumber, leafy greens, and a quick parsley dressing. The recipe makes two generous servings.

Start with the grains

Cook ¾ cup dry quinoa or brown rice according to its package directions, then fluff it with a fork. While it cooks, drain and rinse one 15-ounce can of chickpeas and pat them dry; removing excess moisture helps them brown instead of steam. Set out one small cucumber, half an avocado, and two handfuls of tender greens.

Give chickpeas a crisp edge

Warm one tablespoon of olive oil in a skillet over medium heat, then add the chickpeas with ½ teaspoon ground cumin, ¼ teaspoon smoked paprika, and a pinch of salt. Cook for 8 to 10 minutes, stirring now and then, until the chickpeas are hot and browned in spots. Finish with the zest and juice of half a lemon.

Whisk a bright herb sauce

Finely chop a small handful of parsley and stir it into two tablespoons of tahini with the juice of the remaining lemon half and one tablespoon of water. Add more water a teaspoon at a time until the sauce drizzles easily, then season to taste. Divide the grains, greens, sliced cucumber, avocado, and chickpeas between two bowls and spoon the sauce over the top.
